  • 2 cups chicken broth (475 ml)

  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 medium carrot, diced
  • 1/2 cup frozen peas (75 g)
  • 1/4 cup fresh parsley, chopped (15 g)
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (1 g)
  • 1 lemon, juiced


Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, bring chicken broth to a boil over medium heat.
  3. Add rice to the pot, cover, and reduce heat to low.
  4. Cook rice for 15 minutes, or until tender and liquid is absorbed.
  5. In a large skillet, heat olive oil over medium-high heat.
  6. Add the onion and carrot to the skillet and sauté for 3 minutes.
  7. Stir in the minced garlic and cook for 1 minute, until fragrant.
  8. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink.
  9. Stir in the frozen peas and cook for an additional 2 minutes.
  10. Season the mixture with salt and black pepper.
  11. Add cooked rice to the skillet and mix well to combine.
  12. Stir in lemon juice and chopped parsley.
