Ingredients

- 2 cups chicken broth (475 ml)

- 1 small onion, finely chopped
- 1 medium carrot, diced
- 1/2 cup frozen peas (75 g)
- 1/4 cup fresh parsley, chopped (15 g)
- 1 teaspoon salt (5 g)
- 1/2 teaspoon black pepper (1 g)
- 1 lemon, juiced
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, bring chicken broth to a boil over medium heat.
- Add rice to the pot, cover, and reduce heat to low.
- Cook rice for 15 minutes, or until tender and liquid is absorbed.
- In a large skillet, heat olive oil over medium-high heat.
- Add the onion and carrot to the skillet and sauté for 3 minutes.
- Stir in the minced garlic and cook for 1 minute, until fragrant.
- Add shrimp to the skillet and cook for 2-3 minutes per side, until pink.
- Stir in the frozen peas and cook for an additional 2 minutes.
- Season the mixture with salt and black pepper.
- Add cooked rice to the skillet and mix well to combine.
- Stir in lemon juice and chopped parsley.
- Cook for 2 more minutes, stirring occasionally, to heat through.
- Serve the garlic shrimp rice pilaf hot.
