Ingredients

  • – 1.1 pounds (500 g) shrimp – peeled and deveined
  • – 1 tsp (5 ml) salt
  • – 1 tsp (5 ml) black pepper
  • – 1 tsp (5 ml) sweet paprika
  • – 1 tsp (5 ml) garlic powder
  • – 1 tbsp (15 ml) unsalted butter
  • – 1 tbsp (15 ml) olive oil – or vegetable oil
  • – 4 garlic cloves – minced
  • – 1 yellow onion – diced
  • – 1 can (14 oz/400 ml) unsweetened coconut milk – full fat
  • – 2 tsp (10 ml) cornstarch
  • – 2 tbsp (30 ml) fish sauce
  • – 1 tsp (5 ml) honey
  • – 2 tbsp (30 ml) lime juice
  • – 2 tbsp (30 ml) chopped cilantro – more for serving
  • – chili flakes – for serving
  • – freshly cracked black pepper – for serving


Instructions

  1. Prepare everything before starting to cook. In a bowl, combine the shrimp with salt, pepper, paprika, and garlic powder. Mix well and set aside.
  2. Chop the garlic very finely. Dice the onion into small pieces and chop the cilantro.
  3. In a large pan, melt the butter with the oil over high heat. Lay the shrimp in a single layer and cook for 1 minute on each side. Remove them from the pan.
  4. Lower the heat to a gentle setting and add the garlic and onion. Cook until they become soft and give off a pleasant smell, about 3 minutes.
  5. Pour in ¾ of the coconut milk. Mix the rest of the coconut milk with cornstarch and add this to the pan.
  6. Add fish sauce, honey, and lime juice, and let it cook gently for 2 minutes.
  7. Mix in the cilantro and put the shrimp back in the pan. Stir to coat them and let them warm up for about 1 minute.
  8. Taste the dish and adjust the fish sauce and lime juice if needed, adding by teaspoon.
  9. Finish with cilantro, chili flakes, and freshly cracked black pepper on top. Serve right away and enjoy!
