Ingredients
- 1.1 pounds shrimp (peeled and deveined)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon sweet paprika
- 1 teaspoon garlic powder
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil (or vegetable oil)
- 4 garlic cloves (minced)
- 1 yellow onion (diced)
- 1 can (14 oz/400 ml) unsweetened coconut milk (full fat)
- 2 teaspoons cornstarch
- 2 tablespoons fish sauce
- 1 teaspoon honey
- 2 tablespoons lime juice
- 2 tablespoons chopped cilantro (more for serving)
- Chili flakes (for serving)
- Freshly cracked black pepper (for serving)
Instructions
- Start by getting all the prep done before you begin cooking. Mix the shrimp, salt, black pepper, sweet paprika, and garlic powder in a bowl, stirring to combine. Set it aside to let the flavors meld.
- Mince the garlic, finely chop the onion, and chop the cilantro. These steps will ensure that each ingredient is ready to blend together in harmony.
- In your preheated skillet, add the olive oil and butter. Allow them to heat up before introducing the shrimp. Place the shrimp in a single layer and sear for one minute per side until they turn a beautiful pink. Remove them from the skillet and set aside.
- Reduce the heat to low and add the minced garlic and diced onion to the skillet. Sauté for about three minutes until soft and fragrant.
- Pour in three-quarters of the coconut milk, stirring gently. Take the remaining coconut milk and combine it with cornstarch in a separate bowl. Pour this mixture into the skillet and stir it in.
- Add the fish sauce, honey, and lime juice. Allow everything to simmer for about two minutes, allowing those rich flavors to develop.
- Stir in the cilantro and return the shrimp to the skillet. Toss to coat them in the sauce and simmer for one more minute, or until the shrimp are heated through.
- Serve immediately, topped with fresh cilantro, chili flakes, and a sprinkle of freshly cracked black pepper.
Notes
Allow the shrimp to marinate in the seasoning for about 15 minutes before cooking for deeper flavor.
