Ingredients

  • – 14 oz (400 g) Fettuccini Pasta Noodles, cooked
  • – 20-25 large Shrimp, uncooked, raw, with tails removed
  • – 2 tbsp (30 ml) Vegetable Oil, melted
  • – 5 cloves Garlic, minced
  • – 1 tsp (5 ml) Parsley, dried
  • – 1/2 tsp (3 ml) Onion Powder
  • – 1/2 tsp (3 ml) Granulated Garlic
  • – 1 1/2 cups (360 ml) Heavy Cream
  • – 1 1/2 cups (150 g) Parmesan Cheese, grated
  • – 1/4 cup (60 ml) Vegetable Oil
  • – 4 Cloves Garlic, minced
  • – Salt & Pepper, to taste
  • – Reserved Pasta Water
  • – 1/4 cup (10 g) Fresh Basil, roughly chopped


Instructions

  1. * Note – After boiling the pasta, save up to one cup of the water in which it was cooked. This will help in thickening the Alfredo sauce.
  2. Mix together 2 tablespoons of vegetable oil, 5 cloves of minced garlic, dried parsley, onion powder, and granulated garlic in a small dish.
  3. In a medium-sized skillet, combine minced garlic, vegetable oil, and raw shrimp. Cook on medium-high heat for 5-10 minutes, stirring the shrimp occasionally, until the shrimp starts to brown. Ensure not to overcook them. The shrimp is done when it turns pink.
  4. Take off the heat and set aside.
  5. In a large sauté pan over medium-low heat, warm the vegetable oil. Make sure the oil does not overheat. Once the oil begins to bubble slightly, add in the minced garlic. Cook for 30 seconds until you can smell the garlic.
  6. Gently pour in the heavy cream while whisking nonstop until it blends smoothly with the oil. Let the sauce mixture come to a gentle simmer.
  7. Lower the heat to the minimum and gradually add the grated Parmesan in portions, whisking constantly until the cheese is fully melted and mixed in. Slowly incorporate the reserved pasta water, one tablespoon at a time, while whisking. You may not need all the reserved pasta water. Add it gradually until you reach your preferred sauce consistency; I typically add about 2-3 tablespoons. Stir for a few minutes to thicken the sauce. Remove from heat and add salt and pepper to taste.
  8. Right after the sauce is ready, mix in the cooked fettuccine pasta noodles. Use a spoon or tongs to thoroughly coat the pasta with the sauce. Top with the prepared garlic shrimp and fresh basil. Serve right away.

Notes

  • Ensure shrimp are not overcooked by removing them from heat once they turn pink.
  • Whisk Parmesan cheese into sauce gradually for a smooth, creamy texture.
  • Adjust Alfredo sauce consistency by gradually adding reserved pasta water until desired thickness is achieved.
