Ingredients
- 4 tablespoon (60 ml) s olive oil divided
- 6 cloves garlic minced
- 1 pound (454 g) shrimp medium sized, peeled, deveined, tail off
- 2 tablespoon (30 ml) s lemon juice freshly squeezed
- 2 tablespoon (30 ml) s italian parsley chopped
- 1 pound (454 g) penne pasta
- 4 cup (960 ml) s low-sodium chicken broth
- 2 cup (480 ml) s heavy cream
- 4 cup (960 ml) s parmesan cheese freshly shredded, plus more for topping
- Kosher salt
- Black pepper freshly ground
Instructions
- Warm two tablespoons of olive oil in a large pan over medium heat. Add the minced garlic and sauté for 3-4 minutes, ensuring the garlic becomes soft but does not brown. Introduce the shrimp and lightly season with salt and pepper. Cook until the shrimp become pink. Drizzle fresh lemon juice over the shrimp and sprinkle with parsley. Move the shrimp and garlic mixture, including all the juices, into a bowl and cover to maintain warmth.
- In the same pan, combine the uncooked pasta, two tablespoons of olive oil, chicken broth, heavy cream, one teaspoon of kosher salt, and half a teaspoon of freshly ground black pepper. Bring this mixture to a boil, then lower the heat to a gentle simmer and cover the pan. Let it simmer with the lid on for about 15 minutes, or until the pasta reaches an al dente texture.
- Take the pan off the heat and gradually mix in the parmesan cheese, followed by the previously prepared shrimp and garlic mixture. The sauce will thicken as it cools.
