Description

A simple yet flavorful dish featuring tender shrimp roasted with garlic and parmesan, perfect for any occasion.


Ingredients

  • 1 lb large shrimp (peeled and deveined, tails on or off)
  • 2 tbsp olive oil
  • 4 cloves garlic (minced very finely)
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/3 cup Parmesan cheese (finely grated)
  • 1/2 tsp kosher salt (plus more to taste)
  • 1/4 tsp black pepper
  • 1 pinch red pepper flakes (optional)
  • 1 tbsp lemon juice (plus wedges for serving)
  • 2 tbsp fresh parsley (chopped, optional)


Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) and prepare a rimmed baking sheet with parchment or foil.
  2. Pat the shrimp very dry with paper towels and transfer them to a mixing bowl.
  3. Add olive oil, minced garlic, oregano, basil, grated parmesan, kosher salt, black pepper, and red pepper flakes (if desired) to the bowl.
  4. Toss everything to ensure the shrimp are evenly coated.
  5. Spread the shrimp in a single layer on the baking sheet, leaving a little space between pieces.
  6. Roast the shrimp for 6 to 9 minutes, depending on their size, until they turn pink, opaque, and just firm.
  7. Immediately drizzle with lemon juice and sprinkle with parsley, if using.
  8. Serve hot and enjoy!

Notes

For extra flavor, consider adding a splash of soy sauce or a dash of hot sauce to the shrimp mixture before roasting.
