Description

A delightful dish of roasted shrimp and broccoli, infused with garlic and Parmesan, perfect for family dinners or gatherings.


Ingredients

  • 4 cups broccoli florets
  • 3 tablespoons olive oil, divided
  • 4 cloves minced garlic, divided
  • 1/2 cup Parmesan, divided
  • 1 teaspoon dried basil, divided
  • 1/4 teaspoon red pepper flakes (optional)
  • 1.33 lbs shrimp, peeled and deveined
  • 1 lemon
  • Salt and pepper, to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the broccoli florets with half the olive oil, half the minced garlic, half the Parmesan, half the dried basil, and half the red pepper flakes (if using). Season with salt and pepper.
  3. Lay the broccoli flat on a baking sheet lined with foil.
  4. Roast the broccoli in the oven for 10 minutes.
  5. Meanwhile, in a bowl, combine the remaining olive oil, garlic, Parmesan, basil, and red pepper flakes. Toss with the shrimp until well coated.
  6. After 10 minutes, add the shrimp on top of the broccoli and return to the oven. Cook for an additional 6-9 minutes, until shrimp are opaque and cooked through.
  7. Remove from the oven and squeeze fresh lemon juice over the dish before serving.

Notes

Feel free to customize the amount of garlic or add more herbs to elevate the dish.
