Ingredients
- – 1.36 kg (1.5 lbs) of Fresh Mussels, cleaned and de-bearded
- – 60 g (4 tbsp) of Vegetable Oil
- – 5 Garlic Cloves, chopped
- – 1 Lemon, juiced
- – 10 g (2 tsp) of Red Pepper Flakes
- – 120 ml (1/2 cup) of Vegetable Broth
- – 60 ml (1/4 cup) of Vegan Parmesan
- – Chopped Parsley for garnish
- – Wedged Lemons for garnish
Instructions
- Warm up your grill to a medium-high level, approximately 375°F, and place your skillet with vegetable oil on it about 2 minutes before you start cooking.
- Add the chopped garlic to the skillet and let it brown for about 1 minute.
- Incorporate the red pepper flakes and freshly squeezed lemon juice, allowing them to heat for an additional minute.
- Pour in the vegetable broth and let it simmer for 2 minutes.
- Introduce the cleaned and de-bearded mussels to the mixture.
- Stir the mussels into the sauce, cooking them for about 2 minutes until they begin to open. Once around three-quarters have opened, reposition them so their openings face upwards.
- Sprinkle the vegan Parmesan evenly over the mussels. Cover with foil and place a few hot coals on top to help the cheese caramelize.
- Allow them to cook for 1 minute before removing them.
- Serve the mussels straight from the skillet or transfer them to a plate, garnishing with chopped parsley and lemon wedges for added flavor. Enjoy!
