  • 2 pounds (900g) chicken thighs
  • 5 pounds (680g) baby potatoes, halved
  • 1 tablespoon (15g) olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon (5g) salt
  • 1/2 teaspoon (2g) black pepper
  • 1 teaspoon (2g) dried thyme
  • 1 teaspoon (2g) dried oregano
  • 1/2 cup (50g) grated cheddar cheese
  • 1 tablespoon (15g) chopped fresh parsley


Instructions

  1. Place the chicken thighs in the bottom of the crockpot.
  2. Add the halved baby potatoes on top of the chicken.
  3. Drizzle the olive oil over the chicken and potatoes.
  4. Sprinkle the minced garlic evenly over the mixture.
  5. Season with salt and black pepper.
  6. Add dried thyme and oregano, distributing them evenly.
  7. Cover the crockpot with the lid.
  8. Cook on low for 6-7 hours or on high for 3-4 hours.
  9. Check that the chicken is cooked through and tender.
  10. Sprinkle the grated Parmesan cheese over the chicken and potatoes.
  11. Let it cook for an additional 15 minutes until the cheese melts.
