Ingredients
- 2 pounds (900g) chicken thighs
- 5 pounds (680g) baby potatoes, halved

- 1/2 teaspoon (2g) black pepper
- 1 teaspoon (2g) dried thyme
- 1 teaspoon (2g) dried oregano
- 1/2 cup (50g) grated cheddar cheese
- 1 tablespoon (15g) chopped fresh parsley
Instructions
- Place the chicken thighs in the bottom of the crockpot.
- Add the halved baby potatoes on top of the chicken.
- Drizzle the olive oil over the chicken and potatoes.
- Sprinkle the minced garlic evenly over the mixture.
- Season with salt and black pepper.
- Add dried thyme and oregano, distributing them evenly.
- Cover the crockpot with the lid.
- Cook on low for 6-7 hours or on high for 3-4 hours.
- Check that the chicken is cooked through and tender.
- Sprinkle the grated Parmesan cheese over the chicken and potatoes.
- Let it cook for an additional 15 minutes until the cheese melts.
- Turn off the crockpot and sprinkle fresh parsley on top before serving.
