Ingredients
- 4 salmon fillets, about 6 ounces (170 g) each (170 grams)
- 2 tablespoons vegetable oil (30 ml)
- 4 cloves garlic, minced
- 1/2 cup (120 ml) grated plant-based cheese (50 grams)
- 1/4 cup (60 ml) chopped fresh parsley (15 grams)
- 1 teaspoon (5 ml) dried oregano (1 gram)
- 1/2 teaspoon (3 ml) salt (2.5 grams)
- 1/4 teaspoon (1 ml) black pepper (0.5 gram)
- 1 lemon, sliced thinly
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Place the salmon fillets on the prepared baking sheet.
- Drizzle the olive oil evenly over the salmon fillets.
- In a small bowl, combine the minced garlic, grated Parmesan cheese, chopped parsley, dried oregano, salt, and black pepper.
- Mix the ingredients together until well combined.
- Spread the garlic Parmesan mixture evenly over the top of each salmon fillet.
- Arrange the lemon slices over and around the salmon fillets.
- Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven and let it rest for a couple of minutes.
- Serve the salmon warm, garnished with additional parsley if desired.

- For a crispy top, broil the salmon during the final 2-3 minutes of baking.
