Ingredients

  • 4 salmon fillets, about 6 ounces (170 g) each (170 grams)
  • 2 tablespoons vegetable oil (30 ml)
  • 4 cloves garlic, minced
  • 1/2 cup (120 ml) grated plant-based cheese (50 grams)
  • 1/4 cup (60 ml) chopped fresh parsley (15 grams)
  • 1 teaspoon (5 ml) dried oregano (1 gram)
  • 1/2 teaspoon (3 ml) salt (2.5 grams)
  • 1/4 teaspoon (1 ml) black pepper (0.5 gram)
  • 1 lemon, sliced thinly


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Place the salmon fillets on the prepared baking sheet.
  4. Drizzle the olive oil evenly over the salmon fillets.
  5. In a small bowl, combine the minced garlic, grated Parmesan cheese, chopped parsley, dried oregano, salt, and black pepper.
  6. Mix the ingredients together until well combined.
  7. Spread the garlic Parmesan mixture evenly over the top of each salmon fillet.
  8. Arrange the lemon slices over and around the salmon fillets.
  9. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  10. Remove from the oven and let it rest for a couple of minutes.
  11. Serve the salmon warm, garnished with additional parsley if desired.
