Description

A delicious and aromatic dish featuring roasted salmon fillet marinated in garlic and lemon, perfect for family dinners and gatherings.


Ingredients

  • 2 lbs (900g) Salmon Fillet
  • 2 tablespoons Extra Virgin Olive Oil
  • 4-6 cloves Garlic, minced
  • 1 large Lemon (for zest and juice)
  • 1 teaspoon Dried Oregano
  • ½ teaspoon Sea Salt
  • ¼ teaspoon Black Pepper, freshly ground
  • 2 tablespoons Fresh Parsley, chopped
  • 1 additional Lemon, thinly sliced (for roasting)


Instructions

  1. Preheat your oven to 400°F (200°C) and line a large, rimmed baking sheet with parchment paper.
  2. Lay half of the lemon rounds in a single layer on the parchment paper.
  3. Gently pat the salmon fillet dry with paper towels.
  4. Place the salmon fillet on top of the lemon slices.
  5. In a small bowl, combine the olive oil, minced garlic, zest, and juice of one lemon. Whisk in the dried oregano, sea salt, and black pepper until well blended.
  6. Pour the garlic lemon mixture evenly over the salmon fillet.
  7. Place any remaining lemon slices around the sides and on top of the salmon.
  8. Roast the salmon in the preheated oven for 15-20 minutes, until it flakes easily with a fork and the internal temperature registers 130-135°F (54-57°C).
  9. Remove from the oven and sprinkle chopped parsley over the hot salmon.
  10. Let the fish rest for 3-5 minutes before serving.
  11. Transfer the salmon to a serving platter or serve directly from the baking sheet.

Ensure you use fresh, high-quality ingredients for the best flavor. Allow the salmon to marinate for at least 30 minutes if time permits.
