Ingredients
- 2 salmon fillets (about 170 g each)
- 15 ml olive oil
- 30 g unsalted butter
- 60 g plain breadcrumbs
- 3 cloves garlic, minced
- 15 g fresh parsley, chopped
- 5 g salt
- 25 g black pepper
- 25 g red pepper flakes (optional)
- 15 ml lemon juice
- 5 g lemon zest
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the salmon fillets dry with paper towels and place them on a baking sheet lined with parchment paper.
- Drizzle the salmon fillets with olive oil and season with salt and black pepper.
- Melt the butter in a small saucepan over medium heat.
- Add the minced garlic to the melted butter and sauté for about 1 minute until fragrant.
- Stir in the breadcrumbs and cook until they are golden brown, about 3-4 minutes.
- Remove the breadcrumb mixture from the heat and add the chopped parsley, red pepper flakes (if using), lemon juice, and lemon zest. Mix well.
- Spoon the buttery breadcrumb mixture evenly over the top of each salmon fillet.
- Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven and let the salmon rest for a few minutes before serving.
