Ingredients

  • 2 salmon fillets (about 170 g each)
  • 15 ml olive oil
  • 30 g unsalted butter
  • 60 g plain breadcrumbs
  • 3 cloves garlic, minced
  • 15 g fresh parsley, chopped
  • 5 g salt
  • 25 g black pepper
  • 25 g red pepper flakes (optional)
  • 15 ml lemon juice
  • 5 g lemon zest


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the salmon fillets dry with paper towels and place them on a baking sheet lined with parchment paper.
  3. Drizzle the salmon fillets with olive oil and season with salt and black pepper.
  4. Melt the butter in a small saucepan over medium heat.
  5. Add the minced garlic to the melted butter and sauté for about 1 minute until fragrant.
  6. Stir in the breadcrumbs and cook until they are golden brown, about 3-4 minutes.
  7. Remove the breadcrumb mixture from the heat and add the chopped parsley, red pepper flakes (if using), lemon juice, and lemon zest. Mix well.
