Ingredients
- 2 large potatoes (russet)
- 2 lobster tails
- 2 tablespoons (30 ml) butter (28 grams)
- 2 cloves garlic, minced
- 1/4 cup (60 ml) heavy cream (60 milliliters)
- 1/4 cup (60 ml) grated Parmesan cheese (25 grams)
- 1 tablespoon (15 ml) chopped fresh parsley (4 grams)
- 1 tablespoon (15 ml) chopped fresh chives (4 grams)
- 1 teaspoon (5 ml) lemon juice (5 milliliters)
- Salt to taste
- Black pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and dry the russet potatoes.
- Pierce each potato several times with a fork.
- Bake the potatoes on a baking sheet for 45-60 minutes until tender.
- While the potatoes bake, bring a pot of water to a boil.
- Add the lobster tails to the boiling water and cook for 8-10 minutes until shells are bright red.
- Remove lobster tails from water and let cool.
- Once cooled, remove the lobster meat from the shells and chop into bite-sized pieces.
- Melt the butter in a skillet over medium heat.
- Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
- Add the chopped lobster meat to the skillet and cook for another 2 minutes.
- Stir in the lemon juice, salt, and black pepper to taste, then remove from heat.
- Once the potatoes are cooked, remove them from the oven and let cool slightly.
- Cut each potato in half lengthwise and scoop out the flesh, leaving a thin shell.
- In a bowl, mash the scooped potato flesh with heavy cream, Parmesan cheese, salt, and black pepper.
- Stir the lobster mixture, fresh parsley, and fresh chives into the mashed potatoes.
- Spoon the lobster-stuffed mixture back into the potato shells.
- Place the stuffed potatoes back on the baking sheet.
- Return the potatoes to the oven and bake for an additional 10-15 minutes until heated through.
- Remove from oven and let cool for a few minutes before serving.
