Ingredients
- 2 tbsp. vegetable oil, divided (30 ml)
- 2 bunches asparagus (about 680 g total), tough ends trimmed
- Salt
- 6 tbsp (90 ml). beef butter
- 5 cloves garlic, finely chopped
- 1 tsp (5 ml). onion powder
- Pinch of crushed red pepper flakes
- 680 g medium shrimp, peeled, deveined
- Zest of 1 lemon
- Juice of 1/2 lemon
- Chopped fresh parsley, for serving
Instructions
- In a large frying pan on medium-high heat, warm up 1 tablespoon of oil. Add the asparagus and sprinkle with 1/2 teaspoon of salt. Stir occasionally and cook until the asparagus is tender but still has a crunch, about 8 to 10 minutes. Move them to a separate dish.
- Using the same pan on medium heat, combine the beef butter, garlic, onion powder, crushed red pepper flakes, and the remaining tablespoon of oil. Stir until the butter is completely melted.
- Put in the shrimp and sprinkle with 1/2 teaspoon of salt. Cook until the shrimp turns pink and is fully done, about 1 to 2 minutes on each side.
- Take the pan off the heat and mix in the asparagus.
- Add the lemon zest, lemon juice, and chopped parsley. Toss everything together to blend well.
