Ingredients

  • Large mushroom caps, about 12
  • 1 pound (450 g) shrimp, peeled and deveined
  • 4 tablespoon (60 ml) s (1/2 stick or 57g) unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup (25 g) grated Parmesan cheese
  • 1/4 cup (15 g) chopped fresh parsley
  • 1/4 teaspoon (1 ml) salt
  • 1/4 teaspoon (1 ml) black pepper
  • 1 tablespoon (15 ml) lemon juice
  • 1/4 cup (60 ml) olive oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Clean the mushroom caps and remove the stems.
  3. Arrange the mushroom caps on a baking sheet.
  4. In a skillet, heat olive oil over medium heat.
  5. Add minced garlic to the skillet and sauté for 1 minute.
  6. Add shrimp to the skillet and cook until pink, about 3-4 minutes.
  7. Stir in lemon juice, salt, and black pepper with the shrimp.
  8. Remove the skillet from heat and allow shrimp mixture to cool slightly.
  9. Chop the cooked shrimp into small pieces.
  10. In a bowl, combine chopped shrimp, melted butter, Parmesan cheese, and parsley.
  11. Spoon the shrimp mixture into each mushroom cap.
  12. Bake the stuffed mushroom caps for 15-20 minutes, until mushrooms are tender.
  13. Remove from the oven and let cool for a few minutes before serving.

  • Thoroughly clean mushroom caps to remove dirt before stuffing.
