Ingredients
- Large mushroom caps, about 12
- 1 pound (450 g) shrimp, peeled and deveined
- 4 tablespoon (60 ml) s (1/2 stick or 57g) unsalted butter
- 4 cloves garlic, minced
- 1/4 cup (25 g) grated Parmesan cheese
- 1/4 cup (15 g) chopped fresh parsley
- 1/4 teaspoon (1 ml) salt
- 1/4 teaspoon (1 ml) black pepper
- 1 tablespoon (15 ml) lemon juice
- 1/4 cup (60 ml) olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Clean the mushroom caps and remove the stems.
- Arrange the mushroom caps on a baking sheet.
- In a skillet, heat olive oil over medium heat.
- Add minced garlic to the skillet and sauté for 1 minute.
- Add shrimp to the skillet and cook until pink, about 3-4 minutes.
- Stir in lemon juice, salt, and black pepper with the shrimp.
- Remove the skillet from heat and allow shrimp mixture to cool slightly.
- Chop the cooked shrimp into small pieces.
- In a bowl, combine chopped shrimp, melted butter, Parmesan cheese, and parsley.
- Spoon the shrimp mixture into each mushroom cap.
- Bake the stuffed mushroom caps for 15-20 minutes, until mushrooms are tender.
- Remove from the oven and let cool for a few minutes before serving.
