Ingredients
- 1 lb large shrimp (peeled and deveined)
- 3 tablespoons unsalted butter
- 3 tablespoons olive oil
- 4-5 garlic cloves (minced)
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and freshly ground black pepper (to taste)
- Fresh parsley (for garnish)
- Wooden or metal skewers
Instructions
- Prepare the shrimp by peeling, deveining, and rinsing them under cold water, then pat dry.
- Melt unsalted butter and olive oil in a saucepan over low heat, add garlic, lemon juice, lemon zest, oregano, and paprika, stirring to combine.
- Place shrimp in a bowl, pour the marinade over, and toss to coat. Refrigerate for at least 30 minutes.
- If using wooden skewers, soak them for 30 minutes. Thread shrimp onto the skewers.
- Preheat your grill or skillet over medium-high heat, brushing the grates with oil.
- Cook the shrimp skewers for 2-3 minutes per side until shrimp turn pink and cooked through.
- Remove from heat, garnish with parsley, and serve hot with lemon wedges.
Notes
For added flavor, consider sprinkling crushed red pepper flakes in the marinade. Serve alongside a small bowl of garlic butter for dipping.
