Ingredients

  • 1 pound (454 g) raw shrimp, peeled and deveined
  • 3 tablespoon (45 ml) s olive oil
  • 1 lemon, juiced and freshly zested
  • 4 garlic cloves, minced
  • 1/2 teaspoon (3 ml) crushed red pepper flakes
  • Kosher salt and pepper
  • 1 cup (240 ml) orzo
  • 2 tablespoon (30 ml) s unsalted butter
  • 2 garlic cloves, minced
  • 2 1/4 cup (540 ml) s chicken stock
  • 3 tablespoon (45 ml) s chopped fresh parsley
  • Lemon wedges, for spritzing


Instructions

  1. In a large mixing bowl, toss the shrimp with olive oil, lemon juice and zest, minced garlic, crushed red pepper flakes, and a generous pinch of salt and pepper. Mix well and let it marinate for 10 minutes.
  2. Melt the butter in a large frying pan over medium heat. Once it’s liquefied, add the orzo. Stir frequently until the orzo turns slightly golden and has a toasted aroma. Add the minced garlic and cook for another 30 seconds.
  3. Add the chicken stock to the pan and bring it to a boil. Lower the heat to a simmer and cover the skillet. Let it cook until the orzo has absorbed the liquid and is tender and fluffy, which should take about 12 to 15 minutes.
  4. Introduce the shrimp to the orzo mixture and stir well. Cover the pan once more and cook for an additional 5 to 8 minutes, until the shrimp are pink, opaque, and fully cooked.
  5. Garnish with chopped parsley and a squeeze of lemon. For enhanced flavor, consider stirring in an additional 1 to 2 tablespoons of melted butter, although this is optional. Serve right away!
