Ingredients
- 1 pound (454 g) raw shrimp, peeled and deveined
- 3 tablespoon (45 ml) s olive oil
- 1 lemon, juiced and freshly zested
- 4 garlic cloves, minced
- 1/2 teaspoon (3 ml) crushed red pepper flakes
- Kosher salt and pepper
- 1 cup (240 ml) orzo
- 2 tablespoon (30 ml) s unsalted butter
- 2 garlic cloves, minced
- 2 1/4 cup (540 ml) s chicken stock
- 3 tablespoon (45 ml) s chopped fresh parsley
- Lemon wedges, for spritzing
Instructions
- In a large mixing bowl, toss the shrimp with olive oil, lemon juice and zest, minced garlic, crushed red pepper flakes, and a generous pinch of salt and pepper. Mix well and let it marinate for 10 minutes.
- Melt the butter in a large frying pan over medium heat. Once it’s liquefied, add the orzo. Stir frequently until the orzo turns slightly golden and has a toasted aroma. Add the minced garlic and cook for another 30 seconds.
- Add the chicken stock to the pan and bring it to a boil. Lower the heat to a simmer and cover the skillet. Let it cook until the orzo has absorbed the liquid and is tender and fluffy, which should take about 12 to 15 minutes.
- Introduce the shrimp to the orzo mixture and stir well. Cover the pan once more and cook for an additional 5 to 8 minutes, until the shrimp are pink, opaque, and fully cooked.
- Garnish with chopped parsley and a squeeze of lemon. For enhanced flavor, consider stirring in an additional 1 to 2 tablespoons of melted butter, although this is optional. Serve right away!
