Description

A comforting and elegant dish featuring tender salmon fillets in a creamy garlic butter sauce with fresh spinach and mushrooms.


Ingredients

  • 4 fillets Salmon
  • To taste Salt
  • To taste Freshly Ground Black Pepper
  • 1 tablespoon Olive Oil
  • 4 tablespoons Unsalted Butter (divided)
  • 4 cloves Garlic (minced)
  • 8 ounces Baby Bella Mushrooms (sliced)
  • 4 cups Fresh Spinach
  • 1 cup Heavy Cream
  • 1/2 cup Grated Parmesan Cheese
  • 1 teaspoon Italian Seasoning
  • 2 tablespoons Lemon Juice
  • 1/4 cup Fresh Parsley (chopped, for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the salmon fillets skin-side down. Cook for 4-5 minutes until the skin is crispy.
  3. Flip the salmon carefully and add 2 tablespoons of butter. Cook for an additional 4-5 minutes until it reaches a safe internal temperature.
  4. Remove salmon from the skillet and set aside on a plate.
  5. Add the remaining butter to the skillet and sauté minced garlic until fragrant.
  6. Incorporate sliced baby Bella mushrooms and cook until softened.
  7. Add fresh spinach and allow it to wilt.
  8. Pour in heavy cream, stirring to combine, and simmer gently to thicken.
  9. Stir in grated Parmesan cheese, Italian seasoning, and lemon juice until smooth.
  10. Return the salmon to the skillet, coating it with the creamy sauce and cook for an additional minute.
  11. Garnish with freshly chopped parsley before serving.

Notes

For extra flavor, marinate salmon briefly in olive oil and lemon juice before cooking. Experiment with herbs or add red pepper flakes for spice.
