Ingredients

  • 1 pound (454 g) (450 grams) pasta (such as spaghetti or linguine)
  • 2 tablespoons (30 ml) (30 grams) unsalted butter
  • 2 tablespoons (30 ml) (30 milliliters) olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon (3 ml) red chili flakes
  • 2 pounds (907 g) (900 grams) fresh clams, cleaned
  • 1/2 cup (120 ml) (120 milliliters) beef broth
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1/4 cup (60 ml) (15 grams) chopped fresh parsley
  • 1 lemon, cut into wedges for serving


Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook according to package instructions until al dente.
  3. Drain the pasta, reserving 1/2 cup of pasta water.
  4. In a large pan, heat olive oil and butter over medium heat.
  5. Add minced garlic and chili flakes, sauté for 1-2 minutes until fragrant.
  6. Add clams to the pan and pour in the chicken broth.
  7. Cover the pan and cook until clams open, about 5-7 minutes. Discard any unopened clams.
  8. Season with salt and freshly ground black pepper to taste.
  9. Add the cooked pasta to the pan, tossing to coat in the sauce.
  10. If needed, add reserved pasta water to achieve desired sauce consistency.
  11. Stir in chopped parsley and mix well.
  12. Serve the pasta with lemon wedges on the side.
