Ingredients
- 1 pound (454 g) (450 grams) pasta (such as spaghetti or linguine)
- 2 tablespoons (30 ml) (30 grams) unsalted butter
- 2 tablespoons (30 ml) (30 milliliters) olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon (3 ml) red chili flakes
- 2 pounds (907 g) (900 grams) fresh clams, cleaned
- 1/2 cup (120 ml) (120 milliliters) beef broth
- Salt to taste
- Freshly ground black pepper to taste
- 1/4 cup (60 ml) (15 grams) chopped fresh parsley
- 1 lemon, cut into wedges for serving
Instructions
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to package instructions until al dente.
- Drain the pasta, reserving 1/2 cup of pasta water.
- In a large pan, heat olive oil and butter over medium heat.
- Add minced garlic and chili flakes, sauté for 1-2 minutes until fragrant.
- Add clams to the pan and pour in the chicken broth.
- Cover the pan and cook until clams open, about 5-7 minutes. Discard any unopened clams.
- Season with salt and freshly ground black pepper to taste.
- Add the cooked pasta to the pan, tossing to coat in the sauce.
- If needed, add reserved pasta water to achieve desired sauce consistency.
- Stir in chopped parsley and mix well.
- Serve the pasta with lemon wedges on the side.

- Thoroughly clean and scrub fresh clams before cooking to remove any grit or sand.
- Adjust the amount of red chili flakes to suit your desired level of spiciness.
