Ingredients
- Fresh cod fillets
- Flour
- Cornstarch (optional)
- Bread crumbs or panko
- 1 Egg
- 1/2 cup Milk
- Salt
- Pepper
- Oil for frying
- Lemon wedges (for serving)
Instructions
- Pat the cod fillets dry and season them with salt and pepper.
- Set up a breading station with three bowls: one with flour, one with a beaten egg mixed with milk, and one with bread crumbs.
- Dredge the cod fillets in flour, dip in the egg mixture, then coat with the bread crumbs.
- Heat oil in a frying pan over medium heat until shimmering.
- Fry the coated cod fillets for 4-5 minutes on each side until golden brown.
- Transfer cooked fillets to a plate lined with paper towels to drain excess oil.
- Serve with lemon wedges on the side.
Notes
For a crunchier exterior, mix cornstarch with flour and let the coated fillets sit briefly before frying.
