Description
A crispy and tender fried cod fish sandwich that brings the flavors of the seaside right to your kitchen.
Ingredients
- 24 oz Cod (Icelandic Cod or similar fish)
- Salt and Pepper (to taste)
- 2 qt Peanut oil (or other neutral frying oil)
- 2 cups Flour (divided)
- 1 ½ tbsp Old Bay Seasoning (divided)
- ½ tbsp Paprika
- 1 tsp Turmeric
- ½ tsp White Pepper
- ½ tsp Baking Powder
- 1 Large Egg
- 1 cup Sparkling Water
- 4 Hamburger Buns
- 2 slices Cheddar Cheese
- ½ cup Mayonnaise
- 3 tbsp Dill Pickle (diced)
- 1 tbsp Capers (diced)
- 1 tbsp Parsley (fresh chopped)
- 1 tbsp Lemon Juice
- 2 tsp Dijon Mustard
- Salt (to taste)
- Pepper (to taste)
Instructions
- Pour peanut oil into a large, heavy-bottomed pan and heat it over medium-high until it reaches 375°F.
- In a small bowl, mix the mayonnaise, Dijon mustard, lemon juice, diced pickles, capers, and parsley. Season with salt and pepper and set aside.
- Cut the cod into square portions, season each piece with salt and pepper, and place on a wire rack.
- For the dry dredge, combine a cup of flour with 1 tablespoon of Old Bay seasoning in a shallow bowl.
- For the wet dredge, mix the remaining flour, Old Bay seasoning, paprika, turmeric, white pepper, baking powder, and seasonings. Whisk in the egg and sparkling water.
- Dredge each piece of fish in the dry mixture and then the wet mixture, letting excess batter drip off.
- Fry the battered fish for 2-3 minutes, turning until golden brown, then transfer to a wire rack.
- Steam the buns over simmering water for 10 seconds to warm them.
- Assemble your sandwiches with tartar sauce, fried fish, a slice of cheese, and another layer of sauce before adding the top bun.
Notes
To enhance crunchiness, consider double-dredging the fish. Fresh ingredients elevate the taste of the sandwich.
