Description

Delightful shrimp spring rolls packed with fresh vegetables and served with a creamy peanut dipping sauce for a light and refreshing treat.


Ingredients

  • 8 rice paper wrappers
  • 8 oz shrimp, cooked and peeled
  • 1 cup lettuce, shredded
  • 1 cup carrots, julienned
  • 1/2 cup cucumber, julienned
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh basil leaves
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp honey
  • Water to thin


Instructions

  1. Prepare all ingredients by slicing and washing the vegetables and herbs.
  2. Dip each rice paper wrapper in warm water for about 10 seconds to soften.
  3. Lay the wrapper flat on a clean surface.
  4. Place a few shrimp and a handful of vegetables and herbs towards the bottom of the wrapper.
  5. Fold the bottom up over the filling, then fold the sides in, and roll tightly.
  6. Repeat until all ingredients are used.
  7. For the peanut dipping sauce, mix peanut butter, soy sauce, lime juice, and honey in a bowl, adding water until desired consistency is achieved.
  8. Serve spring rolls with dipping sauce.

Notes

Ensure rice paper is not over-soaked to prevent tearing. Experiment with different filling combinations for added flavor.
