Delightful shrimp spring rolls packed with fresh vegetables and served with a creamy peanut dipping sauce for a light and refreshing treat.
Ingredients
- 8 rice paper wrappers
- 8 oz shrimp, cooked and peeled
- 1 cup lettuce, shredded
- 1 cup carrots, julienned
- 1/2 cup cucumber, julienned
- 1/4 cup fresh mint leaves
- 1/4 cup fresh basil leaves
- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp honey
- Water to thin
Instructions
- Prepare all ingredients by slicing and washing the vegetables and herbs.
- Dip each rice paper wrapper in warm water for about 10 seconds to soften.
- Lay the wrapper flat on a clean surface.
- Place a few shrimp and a handful of vegetables and herbs towards the bottom of the wrapper.
- Fold the bottom up over the filling, then fold the sides in, and roll tightly.
- Repeat until all ingredients are used.
- For the peanut dipping sauce, mix peanut butter, soy sauce, lime juice, and honey in a bowl, adding water until desired consistency is achieved.
- Serve spring rolls with dipping sauce.
Notes
Ensure rice paper is not over-soaked to prevent tearing. Experiment with different filling combinations for added flavor.
