Ingredients

  • 1 froz en deep-dish pie crust from a 12 oz (340 g) package, 2-count Pillsbury™ Deep Dish Pie Crusts
  • 1/2 cup (120 ml) chive-and-onion cream cheese spread from an 8 oz (227 g) container
  • 4 large eggs
  • 12 oz (340 g) froz en cooked medium shrimp thawed, deveined, peeled, and coarsely chopped (tails removed)
  • 1/2 cup (120 ml) shredded pepper Jack cheese approximately 2 oz (57 g)


Instructions

  1. Place a baking sheet on the middle oven rack. Heat the oven to 375°F (190°C). Take one pastry shell out of its packaging and let it sit at room temperature for about 10 to 20 minutes to defrost. Use a fork to poke holes in the base and sides of the shell to stop bubbles from forming as it bakes. Put the shell on the warm baking sheet and bake for 9 to 11 minutes until it turns a light golden color. Take it out and let it cool a bit.
  2. In a medium bowl, whip the chive-and-onion cream cheese until it becomes smooth and fluffy, using a whisk or an electric mixer. Incorporate the eggs one by one, mixing well after each to make a consistent blend. Gently mix in the chopped shrimp and shredded pepper Jack cheese until everything is well combined.
  3. Transfer the prepared mixture into the partially baked pastry shell, spreading it evenly for consistent baking.
  4. Set the filled pie back onto the baking sheet and place it in the oven. Bake at 375°F (190°C) for 30 to 35 minutes until the center is firm and the top is lightly browned.
  5. When done, take the pie out and let it sit at room temperature for 15 minutes to firm up for easier cutting. Serve warm.
