Description
A comforting, creamy fish chowder with crispy bacon, fresh vegetables, and white fish that warms both heart and home.
Ingredients
- 1 lb white fish (like cod or haddock), cut into chunks
- 4 slices bacon, chopped
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 potatoes, diced
- 4 cups fish stock or water
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
- Add the onion, carrots, and celery to the pot and sauté until softened.
- Stir in the potatoes and cook for a few minutes.
- Add the fish stock or water and bring to a simmer. Cook until the potatoes are tender.
- Add the fish chunks and cook until the fish is cooked through, about 5-7 minutes.
- Stir in the heavy cream, and season with salt and pepper.
- Serve hot, garnished with crispy bacon and fresh parsley.
Notes
For enhanced flavor, consider adding a sprig of thyme or a dash of paprika. Adjust the consistency by adding more fish stock or cream as desired.
