Ingredients
- – 1 pound (450g) medium shrimp, peeled and deveined (about 25 shrimp)
- – Kosher salt and freshly ground black pepper to taste
- – 1/2 cup (60g) cornstarch
- – 2 large eggs, beaten
- – 1/4 cup (60ml) vegetable oil for frying
- – 1/2 cup (120 ml) sweet chili garlic sauce in the ethnic food aisle at the grocery store
- – 3 tablespoons (45ml) freshly squeezed lemon juice
- – 2 tablespoons (30ml) honey
- – 1-2 tablespoons (23 ml) lemon zest
- – 1/2 teaspoon (3 ml) Sriracha
- – 1/2 teaspoon (3 ml) freshly grated ginger
- – 1/2 teaspoon (3 ml) garlic salt
Instructions
- Warm vegetable oil in a big pan over medium-high warmth.
- In a large mixing bowl, sprinkle the shrimp with kosher salt and freshly ground black pepper to your liking.
- Gently roll the shrimp in cornstarch until they are fully covered. Just before frying, dip each one into the beaten eggs.
- Place 4-6 shrimp in the hot oil, depending on your pan size, and fry until they turn a golden color, around 2-3 minutes. Move them to a plate lined with paper towels. Repeat with the rest of the shrimp, and get rid of any leftover oil.
- Clean the pan you used for frying the shrimp. Mix together the sweet chili garlic sauce, freshly squeezed lemon juice, and zest, honey, garlic salt, freshly grated ginger, and Sriracha. Boil the mixture over medium-high heat for about 2-3 minutes.
- Return the shrimp to the pan and mix them until they are well-coated with the sauce. Serve right away with rice or on top of fresh vegetables.
