Ingredients

  • 1 lb large shrimp, peeled and deveined (450 g)
  • 2 tbsp olive oil (30 ml)
  • 2 tbsp lime juice (30 ml)
  • 1 tsp lime zest (5 g)
  • 2 cloves garlic, minced
  • 1 tsp ground cumin (2 g)
  • 1 tsp smoked paprika (2 g)
  • 1/2 tsp cayenne pepper (1 g)
  • Salt to taste
  • Black pepper to taste
  • 2 cups cooked white rice (370 g)
  • 1 can chickpeas, drained and rinsed (15 oz can, 425 g)
  • 1 cup corn kernels, fresh or frozen (145 g)
  • 1 cup cherry tomatoes, halved (150 g)
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped (15 g)
  • 1/4 cup green onions, sliced (15 g)
  • 1 lime, cut into wedges


Instructions

  1. In a large bowl, combine olive oil, lime juice, lime zest, minced garlic, ground cumin, smoked paprika, cayenne pepper, salt, and black pepper.
  2. Add the shrimp to the bowl and toss to coat evenly. Let marinate for 15 minutes.
  3. Heat a large skillet over medium-high heat.
  4. Add the marinated shrimp to the skillet in a single layer.
  5. Cook the shrimp for 2-3 minutes on each side, until pink and opaque.
  6. Remove the shrimp from the skillet and set aside.
  7. In a separate large serving bowl, add the cooked white rice.
  8. Layer the black beans, corn kernels, cherry tomatoes, avocado, cilantro, and green onions over the rice.
  9. Place the cooked shrimp on top of the layered ingredients in the bowl.
  10. Gently toss all the ingredients together to combine.
  11. Serve the shrimp bowls with lime wedges on the side for squeezing over.
