Ingredients
- 1 lb large shrimp, peeled and deveined (450 g)
- 2 tbsp olive oil (30 ml)
- 2 tbsp lime juice (30 ml)
- 1 tsp lime zest (5 g)
- 2 cloves garlic, minced
- 1 tsp ground cumin (2 g)
- 1 tsp smoked paprika (2 g)
- 1/2 tsp cayenne pepper (1 g)
- Salt to taste
- Black pepper to taste
- 2 cups cooked white rice (370 g)
- 1 can chickpeas, drained and rinsed (15 oz can, 425 g)
- 1 cup corn kernels, fresh or frozen (145 g)
- 1 cup cherry tomatoes, halved (150 g)
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped (15 g)
- 1/4 cup green onions, sliced (15 g)
- 1 lime, cut into wedges
Instructions
- In a large bowl, combine olive oil, lime juice, lime zest, minced garlic, ground cumin, smoked paprika, cayenne pepper, salt, and black pepper.
- Add the shrimp to the bowl and toss to coat evenly. Let marinate for 15 minutes.
- Heat a large skillet over medium-high heat.
- Add the marinated shrimp to the skillet in a single layer.
- Cook the shrimp for 2-3 minutes on each side, until pink and opaque.
- Remove the shrimp from the skillet and set aside.
- In a separate large serving bowl, add the cooked white rice.
- Layer the black beans, corn kernels, cherry tomatoes, avocado, cilantro, and green onions over the rice.
- Place the cooked shrimp on top of the layered ingredients in the bowl.
- Gently toss all the ingredients together to combine.
- Serve the shrimp bowls with lime wedges on the side for squeezing over.
