Ingredients
- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups cooked cilantro lime rice
- 1 cup cherry tomatoes, halved
- 1 cup corn
- 1 avocado, sliced
- Fresh cilantro for garnish
Instructions
- In a bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper. Add shrimp and toss to coat.
- Heat a pan over medium-high heat and cook shrimp for 2-3 minutes on each side, until pink and cooked through.
- To serve, place a portion of cilantro lime rice in a bowl, top with shrimp, cherry tomatoes, corn, and avocado slices.
- Garnish with fresh cilantro and additional lime juice if desired. Enjoy!
