Description

A vibrant combination of shrimp, cilantro lime rice, and fresh toppings that celebrates the essence of summer.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups cooked cilantro lime rice
  • 1 cup cherry tomatoes, halved
  • 1 cup corn
  • 1 avocado, sliced
  • Fresh cilantro for garnish


Instructions

  1. In a bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper. Add shrimp and toss to coat.
  2. Heat a pan over medium-high heat and cook shrimp for 2-3 minutes on each side, until pink and cooked through.
  3. To serve, place a portion of cilantro lime rice in a bowl, top with shrimp, cherry tomatoes, corn, and avocado slices.
  4. Garnish with fresh cilantro and additional lime juice if desired. Enjoy!
