Ingredients
- 1 lb shrimp, peeled and deveined
- 2 cups cooked fluffy rice
- 1 cup fire-roasted corn
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- 1/2 cup sour cream
- 1/4 cup fresh cilantro for the sauce
- Juice of 1 lime for the sauce
Instructions
- Marinate the shrimp with lime juice, olive oil, chili powder, cumin, salt, and pepper for 10 minutes.
- Heat a skillet over medium-high heat and cook the marinated shrimp for 2-3 minutes on each side until pink and cooked through.
- Blend the sour cream, 1/4 cup cilantro, and juice of one lime in a blender until smooth for the sauce.
- Assemble the bowls by dividing the fluffy rice, adding shrimp, fire-roasted corn, halved cherry tomatoes, and chopped cilantro.
- Drizzle the creamy cilantro sauce over each bowl and serve immediately.
Notes
