Description
A delightful and simple Thai stir-fried rice dish using cooked rice, mixed vegetables, and your choice of protein.
Ingredients
- 2 cups cooked rice
- 1 cup mixed vegetables (carrots, bell peppers, snap peas)
- 1 cup protein (chicken, shrimp, or tofu)
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce (optional)
- 1 tablespoon lime juice
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon vegetable oil
- Fresh cilantro, for garnish
Instructions
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the minced garlic and ginger; sauté until fragrant.
- Add your protein of choice and cook until no longer pink.
- Stir in the mixed vegetables and cook until just tender.
- Add the cooked rice, soy sauce, fish sauce, and lime juice, stirring well to combine.
- Cook for another 2-3 minutes until everything is heated through.
- Serve hot and garnish with fresh cilantro.
Notes
Use day-old rice for the best texture and avoid overcrowding the pan for optimal stir-frying.
