Description

A delightful and simple Thai stir-fried rice dish using cooked rice, mixed vegetables, and your choice of protein.


Ingredients

  • 2 cups cooked rice
  • 1 cup mixed vegetables (carrots, bell peppers, snap peas)
  • 1 cup protein (chicken, shrimp, or tofu)
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce (optional)
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon vegetable oil
  • Fresh cilantro, for garnish


Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the minced garlic and ginger; sauté until fragrant.
  3. Add your protein of choice and cook until no longer pink.
  4. Stir in the mixed vegetables and cook until just tender.
  5. Add the cooked rice, soy sauce, fish sauce, and lime juice, stirring well to combine.
  6. Cook for another 2-3 minutes until everything is heated through.
  7. Serve hot and garnish with fresh cilantro.

Notes

Use day-old rice for the best texture and avoid overcrowding the pan for optimal stir-frying.
