Ingredients
- 454 g Large shrimp, cleaned, shelled, and deveined
- 240 ml Panko bread crumbs
- 1 Large Egg
- 120 ml Mayonnaise
- 1 Lemon, zested
- 1 tablespoon (15 ml) Chopped Chives
- Salt and pepper to taste
- 120 ml Mayonnaise
- 3 Cloves Garlic, pressed or finely minced
- 1 Lemon, juiced and zested
- 1-2 tablespoons (23 ml) Extra virgin olive oil
Instructions
- Warm olive oil in a big frying pan over medium-high heat.
- Wash the shrimp and dry them off with a paper towel.
- Remove the veins from the shrimp and chop them into small pieces, about the size of peas or a bit bigger.
- In a large bowl, combine panko, egg, mayonnaise, chives, lemon zest, salt, and pepper. Mix thoroughly.
- Stir the chopped shrimp into the breadcrumb mixture, ensuring they are well coated.
- Using a large ice cream scoop, form the mixture into round patties with your hands. If desired, roll the patties in extra panko crumbs placed in a shallow dish.
- Lower the heat to medium and place the patties into the heated oil in the skillet. Cook each side for about 3-5 minutes until they are fully cooked. Monitor closely to prevent burning.
