Ingredients

  • 454 g Large shrimp, cleaned, shelled, and deveined
  • 240 ml Panko bread crumbs
  • 1 Large Egg
  • 120 ml Mayonnaise
  • 1 Lemon, zested
  • 1 tablespoon (15 ml) Chopped Chives
  • Salt and pepper to taste
  • 120 ml Mayonnaise
  • 3 Cloves Garlic, pressed or finely minced
  • 1 Lemon, juiced and zested
  • 1-2 tablespoons (23 ml) Extra virgin olive oil


Instructions

  1. Warm olive oil in a big frying pan over medium-high heat.
  2. Wash the shrimp and dry them off with a paper towel.
  3. Remove the veins from the shrimp and chop them into small pieces, about the size of peas or a bit bigger.
  4. In a large bowl, combine panko, egg, mayonnaise, chives, lemon zest, salt, and pepper. Mix thoroughly.
  5. Stir the chopped shrimp into the breadcrumb mixture, ensuring they are well coated.
  6. Using a large ice cream scoop, form the mixture into round patties with your hands. If desired, roll the patties in extra panko crumbs placed in a shallow dish.
  7. Lower the heat to medium and place the patties into the heated oil in the skillet. Cook each side for about 3-5 minutes until they are fully cooked. Monitor closely to prevent burning.
