Ingredients

  • 450 g Large shrimp, cleaned, shelled, and deveined
  • 240 ml Panko bread crumbs
  • 1 Large Egg
  • 120 ml Mayonnaise
  • 1 Lemon, zested
  • 1 tablespoon (15 ml) Chopped Chives
  • Salt and pepper to taste
  • 120 ml Mayonnaise
  • 3 Cloves Garlic, pressed or finely minced
  • 1 Lemon, juiced and zested
  • 1-2 tablespoons (23 ml) Extra virgin olive oil


Instructions

  1. Pour some oil into a large frying pan and heat it on medium-high.
  2. Wash the shrimp and dry them thoroughly with a paper towel.
  3. Remove the veins from the shrimp and cut them into small pieces, roughly pea-sized.
  4. In a sizable mixing bowl, combine the bread crumbs, egg, mayonnaise, chives, lemon zest, and a pinch of salt and pepper, stirring until well blended.
  5. Mix the chopped shrimp into the bread crumb mixture, ensuring the shrimp are fully coated.
  6. Using a large ice cream scoop, shape the mixture into round patties with your hands. (If you want to coat them with extra bread crumbs, do it now. Place additional panko in a shallow dish and press each patty into them.)
  7. Lower the heat to medium and place the patties in the heated oil in the skillet, cooking them for about 3 to 5 minutes on each side until cooked through. (Keep an eye on them and adjust the heat as needed to avoid burning.)
  8. Transfer the cooked patties to a serving plate and serve them warm with the Lemon Aioli Dipping Sauce. (The Lemon Aioli is essential for this recipe—don’t skip it!)
  9. For the aioli, mix together mayonnaise, crushed garlic, and both the juice and zest of one lemon in a small bowl.
  10. Stir thoroughly to blend, then cover and refrigerate until you’re ready to serve.
