Ingredients

  • 450 grams shrimp, peeled and deveined (1 pound (454 g))
  • 450 grams clams, cleaned (1 pound (454 g))
  • 28 grams beef butter (2 tablespoons (30 ml))
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 16 grams all-purpose flour (2 tablespoons (30 ml))
  • 950 milliliters seafood or vegetable broth (4 cups (960 ml))
  • 240 milliliters heavy cream (1 cup (240 ml))
  • 1 teaspoon (5 ml) salt
  • 1/2 teaspoon (3 ml) black pepper
  • 1/2 teaspoon (3 ml) paprika
  • 1/4 teaspoon (1 ml) cayenne pepper
  • 30 grams tomato paste (2 tablespoons (30 ml))
  • 15 milliliters lemon juice (1 tablespoon (15 ml))
  • 8 grams chopped fresh parsley (2 tablespoons (30 ml))


Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the finely chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute.
  4. Sprinkle the all-purpose flour over the onion and garlic, stirring constantly for 2 minutes.
  5. Gradually pour in the seafood or vegetable broth, stirring to combine.
  6. Bring the mixture to a simmer and add the tomato paste, mixing well.
  7. Add the salt, black pepper, paprika, and cayenne pepper to the pot.
  8. Stir in the heavy cream and bring the mixture back to a gentle simmer.
  9. Add the clams to the pot, cover, and cook for 5 minutes.
  10. Add the shrimp to the pot and cook until they are pink and opaque, about 3-4 minutes.
  11. Stir in the lemon juice and chopped fresh parsley.
  12. Taste and adjust seasoning if necessary.
  13. Serve the seafood bisque hot, garnished with additional parsley if desired.
