Ingredients

- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 16 grams all-purpose flour (2 tablespoons (30 ml))
- 950 milliliters seafood or vegetable broth (4 cups (960 ml))
- 240 milliliters heavy cream (1 cup (240 ml))
- 1 teaspoon (5 ml) salt
- 1/2 teaspoon (3 ml) black pepper
- 1/2 teaspoon (3 ml) paprika
- 1/4 teaspoon (1 ml) cayenne pepper
- 30 grams tomato paste (2 tablespoons (30 ml))
- 15 milliliters lemon juice (1 tablespoon (15 ml))
- 8 grams chopped fresh parsley (2 tablespoons (30 ml))
Instructions
- Melt the butter in a large pot over medium heat.
- Add the finely chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute.
- Sprinkle the all-purpose flour over the onion and garlic, stirring constantly for 2 minutes.
- Gradually pour in the seafood or vegetable broth, stirring to combine.
- Bring the mixture to a simmer and add the tomato paste, mixing well.
- Add the salt, black pepper, paprika, and cayenne pepper to the pot.
- Stir in the heavy cream and bring the mixture back to a gentle simmer.
- Add the clams to the pot, cover, and cook for 5 minutes.
- Add the shrimp to the pot and cook until they are pink and opaque, about 3-4 minutes.
- Stir in the lemon juice and chopped fresh parsley.
- Taste and adjust seasoning if necessary.
- Serve the seafood bisque hot, garnished with additional parsley if desired.
