Ingredients
- – 2 parts whole peppercorns (10g)
- – 1 part sea salt (5g)
- – 1 pound large shrimp (450g; shells on and deveined, with or without heads)
- – 3 tablespoons cornstarch (24g)
- – 1/3 cup vegetable oil (80ml; for shallow frying)
- – salt and pepper mixture (to taste)
- – 6 cloves garlic (finely chopped)
- – 1 long hot green or red pepper (thinly sliced)
Instructions
- Gently toast the whole peppercorns in a small pot over low to medium heat for a quarter of an hour, ensuring they become highly aromatic without burning. Adjust the temperature if necessary. Allow them to cool fully, then grind them into a fine powder using a spice grinder or a mortar and pestle.
- In the same pot, lightly toast the salt on medium heat until it acquires a pale yellow hue. Let it cool and blend it with the powdered pepper. This creates your personalized salt and pepper seasoning, perfect for any dish needing that flavor. The rest of the process is straightforward.
- Wash the shrimp and thoroughly dry them with paper towels. Coat them in cornstarch.
- In a small cast iron pan, heat the oil to 375 degrees Fahrenheit. Place the shrimp in the oil, ensuring there is about an inch of space between each one, and fry them in portions. Cook each side for half a minute. Remove the shrimp and place them on a plate lined with paper towels, then season with your prepared salt and pepper mix to taste.
- In a wok, warm 2 tablespoons of oil on medium heat. Sauté the garlic until it reaches a light golden color, being careful not to let it burn. Drain on a paper towel-lined plate.
- Remove any extra oil from the wok, leaving just about a tablespoon remaining, as this dish should remain “dry.” Add the sliced peppers to the wok. Turn off the heat, reintroduce the garlic, and stir-fry everything together briefly for a minute. Add the shrimp back into the wok, gently mixing everything for ten seconds. Sprinkle a bit more of your salt and pepper mix over the top. Serve immediately!
