Ingredients
- 2 cups of fish fillets (cod or tilapia)
- 4 cups of fish stock or water
- 1 cup of sliced mushrooms
- 1 cup of chopped vegetables (like carrots and bok choy)
- 2 cloves of garlic, minced
- 1 inch piece of ginger, sliced
- 2 tablespoons of soy sauce
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large pot, heat a little oil over medium heat and sauté the garlic and ginger until fragrant.
- Add the mushrooms and vegetables, cooking until they are tender.
- Pour in the fish stock or water and bring to a boil.
- Add the fish fillets and cook until they are opaque and flaky, about 5-7 minutes.
- Stir in the soy sauce, salt, and pepper.
- Serve hot, garnished with chopped green onions.
Notes
For deeper flavor, let the soup simmer for an additional 15-20 minutes after adding the fish. Incorporating seasonal vegetables can add freshness and variety.
