Description

A warm, hearty beef stew made in a crockpot, perfect for busy weeknights or cozy weekends.


Ingredients

  • 2 pounds beef stew meat, cut into chunks
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a crockpot, add the beef stew meat, carrots, potatoes, onion, and garlic.
  2. In a separate bowl, mix together the beef broth, tomato paste, Worcestershire sauce, bay leaf, salt, and pepper. Pour the mixture over the beef and vegetables in the crockpot.
  3. Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the beef is tender.
  4. Remove the bay leaf before serving.
  5. Garnish with fresh parsley and serve with crusty bread or mashed potatoes.

Notes

Marinate the meat overnight for enhanced flavor. Adjust ingredients based on personal taste.
