A warm, hearty beef stew made in a crockpot, perfect for busy weeknights or cozy weekends.
Ingredients
- 2 pounds beef stew meat, cut into chunks
- 4 cups beef broth
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a crockpot, add the beef stew meat, carrots, potatoes, onion, and garlic.
- In a separate bowl, mix together the beef broth, tomato paste, Worcestershire sauce, bay leaf, salt, and pepper. Pour the mixture over the beef and vegetables in the crockpot.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the beef is tender.
- Remove the bay leaf before serving.
- Garnish with fresh parsley and serve with crusty bread or mashed potatoes.
Notes
Marinate the meat overnight for enhanced flavor. Adjust ingredients based on personal taste.
