A simple and flavorful side dish featuring fluffy rice cooked in chicken broth, sautéed onions, garlic, and spices.
Ingredients
- 2 cups white rice
- 4 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt to taste
- Chopped cilantro for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, and sauté until soft and fragrant.
- Stir in the rice, cumin, chili powder, and salt. Cook for 2-3 minutes, stirring constantly.
- Add the diced tomatoes and chicken broth. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is cooked and liquid is absorbed.
- Fluff the rice with a fork, garnish with chopped cilantro, and serve.
Notes
Consider using homemade chicken broth for added flavor. You can also add bell peppers or corn for a vibrant twist.
