Description

A simple and flavorful side dish featuring fluffy rice cooked in chicken broth, sautéed onions, garlic, and spices.


Ingredients

  • 2 cups white rice
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Chopped cilantro for garnish


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, and sauté until soft and fragrant.
  3. Stir in the rice, cumin, chili powder, and salt. Cook for 2-3 minutes, stirring constantly.
  4. Add the diced tomatoes and chicken broth. Bring to a boil.
  5. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is cooked and liquid is absorbed.
  6. Fluff the rice with a fork, garnish with chopped cilantro, and serve.

Notes

Consider using homemade chicken broth for added flavor. You can also add bell peppers or corn for a vibrant twist.
