Description

A vibrant way to enjoy the flavors of fresh produce with beautifully grilled vegetables, enhanced by simple seasonings.


Ingredients

  • 2 Bell peppers
  • 2 Zucchini
  • 1 Eggplant
  • 1 bunch Asparagus
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic powder
  • 2 tablespoons Balsamic vinegar


Instructions

  1. Preheat the grill to medium-high heat.
  2. Cut the vegetables into bite-sized pieces.
  3. In a bowl, toss the vegetables with olive oil, salt, pepper, garlic powder, and balsamic vinegar.
  4. Place the vegetables on the grill and cook for about 10-15 minutes, turning occasionally, until they’re tender and slightly charred.
  5. Remove from the grill and serve warm.

Notes

Cut vegetables uniformly for even cooking. Soak wooden skewers if using. Marinate for deeper flavor.
