Ingredients
- 2 Bell peppers
- 2 Zucchini
- 1 Eggplant
- 1 bunch Asparagus
- 2 tablespoons Olive oil
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 teaspoon Garlic powder
- 2 tablespoons Balsamic vinegar
Instructions
- Preheat the grill to medium-high heat.
- Cut the vegetables into bite-sized pieces.
- In a bowl, toss the vegetables with olive oil, salt, pepper, garlic powder, and balsamic vinegar.
- Place the vegetables on the grill and cook for about 10-15 minutes, turning occasionally, until they’re tender and slightly charred.
- Remove from the grill and serve warm.
Notes
Cut vegetables uniformly for even cooking. Soak wooden skewers if using. Marinate for deeper flavor.
