Description

A refreshing salad featuring glass noodles, shrimp, and crisp vegetables, perfect for summer gatherings.


Ingredients

  • 200g glass noodles
  • 200g cooked shrimp
  • 100g ground meat
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 1 red onion, thinly sliced
  • 2-3 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon sugar
  • 1-2 Thai bird chilies, chopped (adjust to taste)
  • Fresh cilantro, for garnish


Instructions

  1. Soak the glass noodles in hot water for about 10-15 minutes until softened, then drain and set aside.
  2. In a pan, cook the ground meat until browned.
  3. In a large bowl, combine the shrimp, cooked meat, cucumber, carrot, red onion, and soaked glass noodles.
  4. In a separate small bowl, mix fish sauce, lime juice, sugar, and chilies to create the dressing.
  5. Pour the dressing over the salad and toss well to combine all ingredients.
  6. Garnish with fresh cilantro before serving.

Notes

Allow the salad to sit for a few minutes after mixing to let the flavors meld.
