A refreshing salad featuring glass noodles, shrimp, and crisp vegetables, perfect for summer gatherings.
Ingredients
- 200g glass noodles
- 200g cooked shrimp
- 100g ground meat
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- 1 red onion, thinly sliced
- 2-3 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon sugar
- 1-2 Thai bird chilies, chopped (adjust to taste)
- Fresh cilantro, for garnish
Instructions
- Soak the glass noodles in hot water for about 10-15 minutes until softened, then drain and set aside.
- In a pan, cook the ground meat until browned.
- In a large bowl, combine the shrimp, cooked meat, cucumber, carrot, red onion, and soaked glass noodles.
- In a separate small bowl, mix fish sauce, lime juice, sugar, and chilies to create the dressing.
- Pour the dressing over the salad and toss well to combine all ingredients.
- Garnish with fresh cilantro before serving.
Notes
Allow the salad to sit for a few minutes after mixing to let the flavors meld.
