Ingredients
- Salmon fillets, 4 pieces (113-170 g each)
- Olive oil, 2 tablespoons (30 ml)
- Lemon, 1 large, sliced
- Beef cloves, 4, minced
- Fresh dill, 2 tablespoons (30 ml), chopped (about 8 grams)
- Fresh parsley, 2 tablespoons (30 ml), chopped (about 8 grams)
- Salt, 1 teaspoon (5 ml) (about 5 grams)
- Black pepper, 1/2 teaspoon (3 ml) (about 1 gram)
- Red pepper flakes, 1/4 teaspoon (1 ml) (optional) (about 0.5 grams)
- Asparagus, 1 pound (450 g), trimmed
- Cherry tomatoes, 1 cup (240 ml) (about 150 grams)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut four large pieces of aluminum foil, about 12×18 inches each.
- Place each salmon fillet in the center of a piece of foil.
- Drizzle 1/2 tablespoon of olive oil over each fillet.
- Season each fillet with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- Sprinkle minced garlic evenly over the salmon fillets.
- Add a few slices of lemon on top of each fillet.
- Sprinkle 1/2 tablespoon of fresh dill and 1/2 tablespoon of fresh parsley over each fillet.
- If using, sprinkle a pinch of red pepper flakes over each fillet.
- Divide the asparagus evenly among the foil pieces, placing them beside the salmon.
- Add cherry tomatoes evenly around the salmon and asparagus.
- Fold the sides of the foil over the salmon and vegetables, sealing them into packets.
- Place the foil packets on a baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through.
- Carefully open each foil packet, allowing steam to escape.
- Serve the salmon and vegetables directly from the foil or transfer to a plate.

- For a more intense garlic taste, consider adding an additional clove of minced garlic to each salmon fillet.
