Description

A comforting and straightforward fish soup made with tender white fish fillets, aromatic vegetables, and flavorful broth.


Ingredients

  • 1.5 lbs white fish fillets (such as cod or haddock)
  • 2 tbsp olive oil
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup celery (chopped)
  • 2 cups potatoes (diced)
  • 4 cups fish stock
  • 1 can diced tomatoes (14.5 oz)
  • 1 tsp salt
  • 0.5 tsp black pepper (freshly ground)
  • 1 tsp thyme (dried)
  • 1 tsp paprika (smoked)
  • 1 tbsp lemon juice (freshly squeezed)
  • 2 tbsp parsley (chopped)


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, sautéing until translucent.
  3. Stir in the minced garlic, cooking until fragrant.
  4. Add the chopped celery and cook for a few more minutes.
  5. Introduce the diced potatoes to the pot, mixing well.
  6. Pour in the fish stock and diced tomatoes, stirring to combine.
  7. Season with salt, black pepper, thyme, and smoked paprika.
  8. Bring the soup to a gentle simmer, allowing it to cook for about 15 minutes or until the potatoes are tender.
  9. Cut the white fish fillets into bite-sized pieces and add them to the soup.
  10. Allow the soup to cook for an additional 5-7 minutes until the fish is cooked through.
  11. Finish by stirring in the fresh lemon juice and chopped parsley.
