Ingredients
- 3/4 cup all-purpose flour
- 3/4 cup + 2 tablespoons water
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup shredded coconut
- 3/4 cup panko breadcrumbs
- Shrimp, peeled and deveined with tails on
Instructions
- In a bowl, mix flour, garlic powder, paprika, salt, and pepper. Gradually add water and whisk until smooth.
- In another bowl, combine shredded coconut and panko breadcrumbs.
- Take each shrimp by the tail, dip it in the batter, then coat with the panko coconut mixture.
- Heat oil in a frying pan over medium heat. Fry shrimp in batches for 2-3 minutes until golden brown.
- Let shrimp rest on a rack to drain excess oil. Optionally sprinkle with salt before serving.
- Serve with sweet chili sauce for dipping.
Notes
For extra flavor, marinate shrimp in lime juice before battering. Option to toast shredded coconut for a deeper flavor.
