Description

A delightful blend of flavors and textures, this Easy Crispy Coconut Shrimp features a crunchy coating that brings you right to the beach with every bite.


Ingredients

  • 3/4 cup all-purpose flour
  • 3/4 cup + 2 tablespoons water
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded coconut
  • 3/4 cup panko breadcrumbs
  • Shrimp, peeled and deveined with tails on


Instructions

  1. In a bowl, mix flour, garlic powder, paprika, salt, and pepper. Gradually add water and whisk until smooth.
  2. In another bowl, combine shredded coconut and panko breadcrumbs.
  3. Take each shrimp by the tail, dip it in the batter, then coat with the panko coconut mixture.
  4. Heat oil in a frying pan over medium heat. Fry shrimp in batches for 2-3 minutes until golden brown.
  5. Let shrimp rest on a rack to drain excess oil. Optionally sprinkle with salt before serving.
  6. Serve with sweet chili sauce for dipping.

Notes

For extra flavor, marinate shrimp in lime juice before battering. Option to toast shredded coconut for a deeper flavor.
