Description

A delightful dish featuring shrimp coated in a crispy panko and coconut mixture, perfect for casual dinners or gatherings.


Ingredients

  • 3/4 cup all-purpose flour
  • 3/4 cup + 2 tablespoons water
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 10 shrimp (peeled and deveined with the tail on)
  • 1 cup shredded coconut
  • 3/4 cup panko crumbs
  • Sweet chili sauce for serving


Instructions

  1. Mix the batter ingredients (flour, water, garlic powder, paprika, salt, pepper) in a bowl until smooth.
  2. In another bowl, mix panko crumbs and shredded coconut together.
  3. Dip each shrimp in the batter, ensuring it’s fully coated.
  4. Roll the battered shrimp in the panko-coconut mixture until well coated.
  5. Heat oil in a frying pan over medium heat and fry the shrimp in batches, about 2-3 minutes per side, until golden brown and crispy.
  6. Let the shrimp rest on a baking rack for a few minutes to drain excess oil.
  7. Serve hot with sweet chili sauce for dipping.

Notes

For a slight kick, add cayenne pepper to the batter. Double-coat the shrimp for extra crunch by frying them twice.
