A delightful dish featuring shrimp coated in a crispy panko and coconut mixture, perfect for casual dinners or gatherings.
Ingredients
- 3/4 cup all-purpose flour
- 3/4 cup + 2 tablespoons water
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 10 shrimp (peeled and deveined with the tail on)
- 1 cup shredded coconut
- 3/4 cup panko crumbs
- Sweet chili sauce for serving
Instructions
- Mix the batter ingredients (flour, water, garlic powder, paprika, salt, pepper) in a bowl until smooth.
- In another bowl, mix panko crumbs and shredded coconut together.
- Dip each shrimp in the batter, ensuring it’s fully coated.
- Roll the battered shrimp in the panko-coconut mixture until well coated.
- Heat oil in a frying pan over medium heat and fry the shrimp in batches, about 2-3 minutes per side, until golden brown and crispy.
- Let the shrimp rest on a baking rack for a few minutes to drain excess oil.
- Serve hot with sweet chili sauce for dipping.
Notes
For a slight kick, add cayenne pepper to the batter. Double-coat the shrimp for extra crunch by frying them twice.
