Description
Delicious cod fillets cooked in an air fryer, served with herby mayo and asparagus for a nutritious and flavorful meal.
Ingredients
- 25g bunch parsley
- 12g (half a bunch) chives
- 1 Lemon
- 2 large tins (700g) butter beans, rinsed and drained
- 125ml chicken/fish/vegetable stock
- 15g (3 tbsp) grated parmesan cheese
- 2 tbsp crème fraîche
- 1 garlic clove, minced
- 1 pack asparagus
- 4 cod fillets
- 1 garlic clove
- 2 tbsp mayonnaise
Instructions
- Preheat your air fryer to 180°C (355°F) or your oven to 190°C (375°F).
- Rinse the parsley and chives. Finely chop them and zest the lemon, then combine in a bowl.
- Set aside ¼ of the herb and lemon zest mixture for coating the cod.
- In a roasting dish, mix the butter beans, stock, parmesan, majority of the herb mixture, crème fraîche, and minced garlic. Season with salt and pepper.
- Air fry for 10 minutes or oven cook for 13 minutes until the mixture thickens and beans soften.
- Prepare the asparagus by trimming and cutting into 3-4 cm pieces.
- Mix reserved herb and lemon zest with mayonnaise, adding 1 tablespoon lemon juice from wedges and seasoning.
- Pat cod fillets dry, season, and spread herby mayo on top.
- Add asparagus to the roasting dish and place cod on top. Air fry at 200°C (390°F) for 7-12 minutes or oven cook at 220°C (430°F) for same time.
- Serve immediately garnished with lemon wedges.
