Ingredients

  • 2 tsp sea salt (10 ml)
  • Juice from half a lemon
  • Large pot of boiling water
  • 2 lbs (900 g) shrimp, cleaned with tails and veins removed
  • Ice bath
  • 8 beef hot dog buns
  • 1 tsp (5 ml) vegetable oil per bun
  • 1 cup (240 ml) mayonnaise
  • 1 cup (240 ml) diced celery
  • 1/2 cup (120 ml) chopped green onions (Bottoms)
  • 1/3 cup (80 ml) chopped dill
  • 1/4 cup (60 ml) chopped chives
  • 1/4 cup (60 ml) chopped parsley
  • 2 tsp (10 ml) chopped capers
  • 2 Tbsp (30 ml) Dijon mustard
  • 1 Tbsp (15 ml) red grape vinegar
  • Zest of 1 lemon
  • 4 cloves garlic, grated or pressed
  • 1 tsp (5 ml) paprika
  • 1/2 tsp (3 ml) garlic salt
  • 1/4 tsp (1 ml) onion powder
  • 1/2 tsp sea salt (2.5 ml)
  • Fresh Cracked Pepper


Instructions

  1. Heat a substantial pot of water on medium-high heat, incorporating 2 teaspoons of sea salt and juice from half a lemon.
  2. As the water heats, blend the mayonnaise mixture ingredients in a medium bowl.
  3. When the water reaches a rolling boil, submerge the shrimp for 2-3 minutes, then quickly transfer them to an ice bath to halt the cooking.
  4. Spread butter inside and on top of the buns, then broil for 1-2 minutes, watching closely to prevent burning.
  5. Take the shrimp from the ice bath, chop them up, and mix with the mayo mixture before filling the hot dog buns.
  6. Finish with a squeeze of lemon juice, a sprinkle of sea salt, freshly cracked pepper, and parsley.
