Ingredients

  • 1 package (300g) Cherry Tomatoes
  • 2 tablespoons (30 ml) Olive Oil
  • 1/2 pound (225g) Large Raw Shrimp, peeled and deveined
  • Kosher Salt and Ground Black Pepper, for seasoning
  • 2 tablespoons (30 ml) Butter, plus 4 tablespoons (60 ml) cubed
  • 4 cloves Garlic, minced
  • 1/4 teaspoon (1 ml) Red Pepper Flake
  • 1 big cup (240ml) White Grape Juice
  • 2 teaspoons (10 ml) Lemon Juice, about two large wedges
  • 2 tablespoons (30 ml) Parsley, chopped


Instructions

  1. Step 1: Set your oven to 400 degrees Fahrenheit to preheat.
  2. Step 2: Coat the cherry tomatoes with 1 tablespoon of olive oil, sprinkle with kosher salt and ground black pepper, and place them on a baking sheet. Roast in the oven for 15 minutes until the skins crack and they become soft. Take them out and allow them to cool.
  3. Step 3: In a large skillet, warm up 2 tablespoons of butter along with 1 tablespoon of olive oil over medium-high heat. Sprinkle the shrimp with kosher salt and ground black pepper, then add them to the skillet and cook for 2 minutes. Incorporate the garlic and red pepper flakes, stirring until the garlic becomes aromatic, which should take about 30 seconds. Transfer the shrimp to a plate and set it aside.
  4. Step 4: Pour the white grape juice and lemon juice into the skillet to deglaze it. Allow the mixture to boil and reduce the liquid by one-quarter. Add the roasted cherry tomatoes and parsley. Lower the heat and include the cubed 4 tablespoons of butter. Stir until the butter is fully melted and the sauce appears glossy. Adjust the seasoning with kosher salt according to your taste, approximately 1/4 teaspoon.
  5. Step 5: Return the shrimp to the skillet and heat them through for about 2 minutes. Serve right away, either mixed with pasta or alongside crusty French bread for dipping.
