Ingredients

  • Salmon fillets, 1 pound (454 g) (450 grams)
  • Potatoes, 2 pounds (907 g) (900 grams)
  • Fresh dill, 1/4 cup (60 ml) (10 grams)
  • Lemon, 1
  • Olive oil, 2 tablespoons (30 ml) (30 milliliters)
  • Salt, 1 teaspoon (5 ml) (5 grams)
  • Black pepper, 1/2 teaspoon (3 ml) (2.5 grams)
  • Garlic cloves, 2
  • Sour cream, 1 cup (240 ml) (240 milliliters)
  • Onion, 1 medium


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and slice the potatoes thinly.
  3. Chop the onion into thin slices.
  4. Mince the garlic cloves.
  5. In a large bowl, mix potatoes, onion, and garlic.
  6. Add olive oil, salt, and black pepper to the bowl and mix well.
  7. Spread the potato mixture evenly in a baking dish.
  8. Place the salmon fillets on top of the potatoes.
  9. Zest the lemon and sprinkle over the salmon.
  10. Squeeze the lemon juice over the salmon.
  11. Chop the fresh dill finely.
  12. Mix the sour cream with half of the chopped dill.
  13. Spread the sour cream mixture over the salmon.
  14. Cover the dish with aluminum foil.
  15. Bake in the oven for 30 minutes.
  16. Remove the foil and bake for an additional 10-15 minutes.
  17. Garnish with the remaining fresh dill before serving.
