Description

Baked cod with a zesty lemon dill sauce, perfect for quick weeknight dinners.


Ingredients

  • 4 fillets cod
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 lemon (zest and juice)
  • 2 tablespoons fresh dill
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic (minced)
  • 1 tablespoon honey


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grease a baking dish lightly with olive oil.
  3. Arrange the cod fillets in the dish. Season with salt and pepper to taste.
  4. Mix together the lemon zest, lemon juice, minced garlic, fresh dill, Dijon mustard, honey, and remaining olive oil in a small bowl.
  5. Pour the lemon dill sauce evenly over each cod fillet, ensuring they are well coated.
  6. Bake for 15-20 minutes, or until the cod flakes easily with a fork.
  7. Remove from the oven and let it rest for a few minutes before serving.

Notes

For extra flavor, marinate the cod in the lemon dill sauce for at least 30 minutes before cooking. Be careful not to overcook the fish.
