Baked cod with a zesty lemon dill sauce, perfect for quick weeknight dinners.
Ingredients
- 4 fillets cod
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- 1 lemon (zest and juice)
- 2 tablespoons fresh dill
- 1 tablespoon Dijon mustard
- 2 cloves garlic (minced)
- 1 tablespoon honey
Instructions
- Preheat the oven to 400°F (200°C).
- Grease a baking dish lightly with olive oil.
- Arrange the cod fillets in the dish. Season with salt and pepper to taste.
- Mix together the lemon zest, lemon juice, minced garlic, fresh dill, Dijon mustard, honey, and remaining olive oil in a small bowl.
- Pour the lemon dill sauce evenly over each cod fillet, ensuring they are well coated.
- Bake for 15-20 minutes, or until the cod flakes easily with a fork.
- Remove from the oven and let it rest for a few minutes before serving.
Notes
For extra flavor, marinate the cod in the lemon dill sauce for at least 30 minutes before cooking. Be careful not to overcook the fish.
