Ingredients
- 2 fish fillets (such as cod or tilapia)
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons homemade curry powder
- 1 can (400 ml) coconut milk
- 1 tablespoon soy sauce
- Salt and pepper to taste
- Fresh herbs (such as cilantro or parsley) for garnish
Instructions
- Heat the vegetable oil in a pan over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the minced garlic and grated ginger, and cook for another minute.
- Stir in the homemade curry powder and cook for 1-2 minutes until aromatic.
- Pour in the coconut milk and soy sauce; stir to combine.
- Add the fish fillets and simmer for 10-15 minutes, or until the fish is cooked through.
- Season with salt and pepper to taste.
- Garnish with fresh herbs before serving. Serve hot with rice.
