Description

A refreshing cucumber shrimp salad that combines juicy shrimp, crunchy cucumbers, and zesty dressing, perfect for any occasion.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cucumbers, diced
  • 3 green onions, sliced
  • 1/4 cup fresh herbs (like cilantro or parsley), chopped
  • 1/2 cup Greek yogurt or sour cream
  • 2 tablespoons lime juice
  • Salt and pepper to taste


Instructions

  1. Cook the shrimp in boiling water for 2-3 minutes or until they turn pink. Drain and let cool.
  2. In a large bowl, combine the cooked shrimp, cucumbers, green onions, and herbs.
  3. In a separate bowl, whisk together the Greek yogurt (or sour cream), lime juice, salt, and pepper to create the dressing.
