Ingredients
- 1 pound shrimp, peeled and deveined
- 2 cucumbers, diced
- 3 green onions, sliced
- 1/4 cup fresh herbs (like cilantro or parsley), chopped
- 1/2 cup Greek yogurt or sour cream
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- Cook the shrimp in boiling water for 2-3 minutes or until they turn pink. Drain and let cool.
- In a large bowl, combine the cooked shrimp, cucumbers, green onions, and herbs.
- In a separate bowl, whisk together the Greek yogurt (or sour cream), lime juice, salt, and pepper to create the dressing.
- Pour the dressing over the shrimp and cucumber mixture and toss gently to combine.
