Description

A refreshing cucumber salad with imitation crab meat that embodies summer flavors, perfect for picnics and light lunches.


Ingredients

  • 3 cups Persian cucumbers (or Japanese cucumbers)
  • 8 oz imitation crab meat, shredded
  • 1/2 cup mayo
  • 1 tbsp vinegar
  • 1 tsp garlic powder
  • 1 tbsp sugar
  • 1/4 tsp freshly cracked pepper
  • 1 tbsp sesame seeds (or fresh herbs like dill or cilantro)


Instructions

  1. Wash and slice the cucumbers thinly, placing them in a large mixing bowl.
  2. Shred the imitation crab meat into bite-sized pieces and add to the bowl with the cucumbers.
  3. Mix in a separate bowl, combine 1/2 cup mayo, 1 tbsp vinegar, 1 tsp garlic powder, 1 tbsp sugar, and 1/4 tsp freshly cracked pepper. Whisk everything together until well combined.
  4. Pour the dressing over the cucumber and crab mixture. Gently mix until all ingredients are evenly coated.
  5. Add 1 tbsp of sesame seeds or fresh herbs like dill or cilantro for an extra burst of flavor.
  6. Chill the salad for at least 30 minutes in the refrigerator to let the flavors develop.

Notes

For a lighter salad, reduce the amount of mayo or substitute part of it with yogurt. Allowing the salad to chill enhances its refreshing nature.
